Sean Scotese, Michael Huynh’s ex-right hand man at Pho Sure and Bia Garden, will open a 40 seat Pan Asian eatery, Eastern Alley, on Clinton Street. Nothing on the menu will cost more than $20, he said. “But we probably won’t do desserts since the Dessert Truck Works is right next door.” Indeed, the two share the same address, 6 Clinton Street just south of Houston.

Scotese, in partnership with Krit Dangruenrat, a Thai whose family owns the space, looked up this week from sawing wood to make rough cut tables and was alarmed to find himself named as one of the gone missing chefs at BarBao in Eater reports that the the space was listed for sale.  “I never worked for Michael at BarBao,” he said.  “I agreed to back him up at Pho Sure and Bia Garden and that’s it. I left to do something on my own.”

Indeed Scotese and his cooks are doing everything on their own. “We’re practically sleeping here,” Scotese said. “We found an 150-year-old window that had been bricked up and we opened it up.  We’re putting in street lights.”

The kitchen is ready so he’ll start testing dishes this week with the idea of opening the first week in February.
